Stephensons Summer 2023 Recipes: Iced Coffees, Mocktails, and Smoothies


When it's hot outside, sometimes all you want is an ice-cold drink to help you feel refreshed. It isn't always the right time for a beer or a cocktail though, so having plenty of delicious non-alcoholic options for your customers is a must. Classic lemonades and colas will always go down well, but if you want to try something a little bit different, these recipes might inspire you. 

We have put together a few ideas for iced coffees, smoothies, and mocktails that your customers may enjoy. Combining some of the best flavours of the summer with Monin's top-class syrups, these refreshements are sure to make excellent summertime treats.

Vanilla Coconut Iced Latte

Iced lattes can be enjoyed on the go or with a great book sat in your favourite coffee shop. They will always be a popular choice during the peak of the summer as they offer people a boost as well as helping them to cool down. This recipe uses coconut milk as a dairy alternative that adds some tropical flavour that will complement the summer sun. 

Serves 1

Ingredients:

2 shot espresso

30ml Monin Vanilla syrup

170ml unsweetened coconut milk

Method:

Put the coconut milk and Monin Vanilla syrup into glass, stir well to combine. Add plenty of ice, and pour espresso over the top. You may want to use cold brew coffee to avoid ice melting quickly. This is typically stronger, so you may only want to use one shot of cold brew espresso.


Raspberry and Passion Fruit Fizz

Serves 1

Ingredients:

25ml Monin Raspberry syrup

25ml Monin Passion Fruit syrup

Lemonade

Mint sprig (garnish)

Method:

Mix together the Monin Raspberry and Passion Fruit syrups in a glass. Add ice and top with lemonade. Gently pull through the syrups. Garnish with a mint sprig.


Salted Caramel Frappé

Serves 1

Ingredients:

1-2 shot espresso

100ml milk

1-2 scoops vanilla ice cream

30ml Monin Salted Caramel syrup

Method:

Place all ingredients in a blender and mix together. Pour over ice in a glass and add whipped cream, crumbled chocolate, or caramel sauce over the top as a finishing touch. 

If you want to make this into a milkshake, just leave out the espresso.


Thai Iced Coffee

Serves 1

Ingredients:

1-2 shots of espresso (brew coffee with cardamon pods, or add a pinch of ground cardamon to it)

3 tablespoons condensed milk

100ml milk

30ml Monin Vanilla syrup

Method:

Make the espresso and leave to cool down. Use cold brew espresso for busy environments that don't have time wait. Make sure to add cardamon into your coffee for the unique flavour.

In a glass, mix together the milk, condensed milk, and Monin Vanilla syrup well. Add ice, and slowly pour over the espresso.


Tropical Sunrise

Serves 1

Ingredients:

2/3rds of a banana

20ml Monin Mango syrup

20ml Monin Passion Fruit syrup (or 25ml Monin Passion Fruit puree)

100-150ml pineapple juice

Method:

Put all ingredients in a blender with ice and blend well until smoothie is smooth and thick. Pour into glass and enjoy! If you want it to be a bit thicker, we recommend using the Monin Passion Fruit puree over the syrup.


Raspberry Ripple Float

Serves 1

Ingredients:

25ml Monin Raspberry syrup

1 scoop vanilla ice cream

Lemonade

Method:

Put the Monin raspberry syrup into a glass and top with lemonade, gently pulling through the syrup with a spoon. Place a scoop of vanilla ice cream on top, and drizzle a little extra syrup over it.
